Banana Cake with Chocolate Chunks and Walnuts Recipe
5 ripe bananas, mashed
1/2 cup sugar *optional
1.5 tsp vanilla bean extract
1 tsp cinnamon powder
1/2 tsp sea salt
1/2 cup olive oil
2 large eggs
1 cup chocolate chunks (save a few for the top)
1 cup walnuts *optional (save a few for the top)
2.5 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
Parchment lined 9×9 square pan. Preheat oven to 350°F
Mix first 7 ingredients in a large bowl. Fold in the chocolate and walnuts if using.
Gently fold in the flour mixture and pour into baking pan.
Sprinkle walnuts and chocolate over top and put into the oven.
Bake 350°F. For 35 min or until toothpick is clean.
