Cherry Tomato Shakshuka Recipe
10-15 cherry tomatoes, pierced with a knife
2 tblsp tomato paste
1 tblsp olive oil
1 tsp sugar
1/2 tsp salt
1/2 tsp fresh cracked pepper
1/2 tsp cumin seeds
1/2 tsp chipotle pepper (dried)
2 tblsp water
3-4 large eggs
1. In a saucepan add the oil, tomatoes, tomato paste, sugar and salt. Cook in medium heat,stirring occasionally about 10 min.
2. Add the cumin seeds, black pepper, chipotle and water. Stir and cover and continue to cook until a jammy sauce forms about 10 min.
3. Take it off the heat and create little wells in the sauce and add the cracked eggs. Cover and cook for 3 minutes for a yolky centre on low heat.
4. Take off the heat and plate. Top with fresh herbs such as fresh coriander, parsley or dill. Enjoy!
