Almond Pancakes
1 cup flour
1/3 cup ground almonds
1 cup milk
1 egg
1/2 tsp cinnamon
1.5 tsp baking powder
1/4 tsp fleur de sel
1.5 tsp vanilla extra or ground vanilla bean
2 tbsp melted butter
Blend all the ingredients in a high speed blender until smooth; let it stand for about 10 minutes while you prepare your griddle. Add whatever toppings you like (sliced bananas, blueberries etc) Makes approx 12 pancakes. Mix can also be used for waffles.
